Foléré (Hibiscus / Bissap Juice)

Tart but non-alcoholic, with a red color close to that of wine, bissap juice is a natural tonic drink. In Cameroon and throughout sub-Saharan Africa, foléré or bissap juice is served at any time. At certain major ceremonies, it outshines many Western drinks. Ideal as an alcohol-free aperitif, it also aids digestion.

    Steep the hibiscus, the pineapple slices and their peel in 1.5 L of boiling water.

    Let cool for 2 hours at room temperature. Meanwhile, finely chop the fresh mint.

    Strain the preparation through a sieve.

    Add the lime juice, the sugar and the chopped mint and mix well.

    Pour everything into a carafe or a bottle and refrigerate for at least one night.
