Kwa'a Ndzap (Pounded Cocoyam with Greens)

Kwa'a Ndzap (or Kwa'a Ndjap) is a dish typical of the Dschang people, a Bamileke group from the West region of Cameroon. It is made of pounded cocoyam and sautéed black nightshade leaves, hence its name: "Kwa'a" meaning cocoyam and "Ndzap" meaning vegetables.

    Peel the cocoyam, cut it up and wash in fresh water.

    Put them in a pot of water and boil for 30 to 45 minutes.

    Put them immediately into the mortar and pound.

    Add the cocoyam little by little and occasionally wet the pestle to soften the paste.

    Pound until the paste is smooth.

    Remove and set aside.

    Pour the baking soda into a pot of water, add the vegetables and put on the heat.

    Let boil until the vegetables are tender.

    Use a colander to drain.

    Press them and form balls. Set aside.

    In a pot on the heat, put oil, the sliced onions, the sliced garlic and the chopped basil, and stir.

    Let simmer 2 minutes, then add the diced tomato.

    Stir, let simmer 5 minutes, then add the vegetables.

    Mix everything properly, add the vegetables, add the whole chilli.

    Salt, add the crayfish powder and stir.

    Let simmer 20 minutes. It's ready!
