Red and White Cabbage Salad

A crunchy, colorful slaw of finely shredded red and white cabbage with carrots and red onion, dressed in a creamy mustard-yogurt vinaigrette. It is left to marinate in the fridge before serving for the best flavor.

Preparation

20 min
  1. Thinly slice the red and white cabbage with a mandoline (a tool used to slice raw vegetables), then combine them in a salad bowl.
  2. Peel and thinly slice the red onion, add it and mix gently. Peel and grate the carrots, then add them as well.
  3. In a bowl, mix the mustard, white wine vinegar, yogurt, salt and pepper. Emulsify with refined oil. Coat the salad with this dressing, mixing thoroughly so it is well covered. Cover with plastic wrap and let it marinate in the fridge for at least 2 hours before serving.
