Assok Bitetam is an okra cake, much loved in the Beti community of the Centre and South regions of Cameroon. The finely chopped okra is mixed with meat or smoked fish and palm oil, wrapped in banana leaves and steamed.

    Put the cut-up meat in a saucepan.

    Season with salt and bring to a boil with a little water.

    Add water as it dries out until the meat is cooked.

    Put 2 chopped onions into the okra and 1 crushed onion.

    Season with salt and pepper, mix.

    Add the chopped basil.

    Mix and add the cooked meat.

    Add the palm oil and mix.

    Place each banana leaf in a deep dish and pour in a little of the mixture.

    Tie up the parcel.

    Put a lid at the bottom of the pot before placing the parcels in it, and add water little by little during cooking.

    After cooking, dry over the barbecue.
