    Prepare your black-eyed peas the day before:

    Rinse the peas and let them soak in a large amount of lukewarm water for 3 hours or overnight.

    The next day, rub them vigorously between your two hands to detach the skins from the seeds, and rinse several times until the skins no longer rise to the surface.

    Using a blender; puree the peas while gradually adding water, in order to obtain a frothy, lump-free texture. Add the onion and the chili and blend again. Salt and set aside.

    Heat the frying oil, drop small mounds of batter using a spoon and fry them 3 to 5 minutes on each side until they take on a golden color. Drain and keep warm. Serve with a tomato sauce.
