  1. 1
Soak the beans in a large volume of water and let them rest like this for at least 6 hours.
  2. 2
Rinse them and cook them in a pot, covering them generously with water.
  3. 3
Meanwhile, peel the potatoes, wash them and soak them in salted water.
  4. 4
When the beans are cooked, drain and rinse them.
  5. 5
Crush the chilli and set aside.
  6. 6
Drain the potatoes and cook them in 500 ml of water.
  7. 7
When the potatoes start to soften, after about 15 minutes of cooking, add the palm oil and the chilli and stir.
  8. 8
Then stir in the cooked beans and mix.
  9. 9
Then place the pot on a stable surface and hold it firmly.
  10. 10
Using a fufu stick, a pestle or a spatula, gently pound this mixture.
  11. 11
Check the seasoning and pound as finely as you like.
  12. 12
Plate it as you wish; this dish is traditionally served in a ball shape. Let it cool a little so the mash firms up, then serve.
