    Cut and wash the meat. Rinse the seasonings under running water and chop them finely, then crush them with a grinding stone or a food mill.

    Marinate your pork with the previously crushed seasonings.

    Meanwhile, crush the chilli with a little onion. Pour it into a bowl with some oil and set aside.

    In a bowl put parsley, oil and a bouquet garni cube (a regular stock cube works too). Mix well and let it infuse.

    Brush your meat with this mixture while you cook it over the coals.

    Serve with plantain fries, cassava sticks, etc. Enjoy!
