    Clean the mushrooms and trim the base of the stems. Peel the onions and garlic. Chop them finely.

    Heat the oil in a frying pan and sauté the mushrooms in it. Add the onions and garlic, just until they become translucent.

    Add the tomatoes, season with salt and pepper. Let it simmer for 20 minutes over low heat. Five minutes before the end of cooking, add the parsley.
