A refreshing tropical fruit salad of papaya, pineapple and banana mixed with freshly squeezed orange juice and sweetened to taste with sugar or honey. Best served well chilled on hot days.

    Mix the diced papaya, pineapple and banana in a large bowl made of an inert material.

    Mix with the freshly squeezed orange juice, then add sugar or honey if needed.

    Serve immediately or place in the fridge for 30 minutes if you prefer to eat the salad very cold (this is recommended on very hot days).

    The papaya, pineapple and orange juice can be prepared several hours ahead, but peel and cut the bananas just before serving to keep them from browning.

    If you want to make a more "drinkable" version of this recipe you can increase the amount of orange juice, and you can turn it into a salad for adults by adding a little rum or cachaça (a Brazilian sugarcane spirit). I have not yet dared to do it, but I am very tempted even though I would feel I was corrupting one of my favorite childhood recipes from South America.
