Plantain is a highly prized vegetable in Cameroon that accompanies many dishes. Easily mistaken for the sweet banana by its shape and colour, plantain is eaten mainly cooked, ripe or unripe, and can be boiled, fried, grilled or pounded.

    Wash and peel the plantains. If the plantains are ripe, bring the water to a boil before adding them; they would soak up too much water and lose their firmness if put in cold water.

    If they are unripe, put them in a pot of cold water and bring to a boil. The plantains should be well covered with water. Cooking takes about 15 minutes; cooked plantains take on a yellowish colour.

    When they are cooked, empty the water from the pot and replace it with cold water. Let cool. Take a knife and lightly scrape the plantain so it is smooth; do not soak them in water again. You can serve.
