Baobab Juice (Bouye)

Baobab Juice (Bouye)

Native to tropical Africa, the baobab, also called the "tree of life," has many unsuspected and unimaginable virtues. It is one of the rare forest species whose every part (roots, leaves, trunk, bark, pulp, seeds) is used for its therapeutic and nutritional virtues. The fruit pulp, also called "monkey bread," has a tangy taste close to raisins or lemon, and can be enjoyed as a refreshing, energizing drink mixed with water and/or condensed milk, a mixture called "Bouye" in Senegal.

receipt_long Preparation Steps

  1. 1
Soak the baobab fruit seeds in 2 liters of boiling water and add 1 liter of cold water.
  2. 2
Leave for 30 minutes in the water to soften the fruit.
  3. 3
After a while, the baobab fruit will dissolve as you stir it with your hands.
  4. 4
Remove the black seeds once free of pulp. You can also use a whisk to stir the preparation in order to make it easier to extract the pulp.
  5. 5
Strain the pulp juice through a fine sieve to remove the impurities. Then boil it for 5 minutes.
  6. 6
Remove the preparation from the heat and immediately cool it down in a container placed in cold water. Using a spatula, work the pulp juice by adding the sugar and the vanilla sugar, then stir again while it is still hot. Add the condensed milk and stir well.
  7. 7
Make sure to obtain a smooth and uniform juice without any imperfection. Finally, place your bouye juice in the refrigerator.
