    After cutting up the beef skin, wash it thoroughly and boil it for 20 to 30 minutes.

    Meanwhile, in a saucepan, sweat the 2 chopped onions in the oil.

    Cook them over low heat until they become translucent.

    Add the minced garlic at the end, just long enough for it to brown very lightly without burning.

    Then add the diced tomatoes, raise the heat to medium-high and let it simmer for 15 to 20 minutes, adding the minced bell pepper, leek and parsley, plus the salt, pepper and chilli.

    Lower the heat and stir to reduce the sauce.

    Add your previously cooked beef skin and let it simmer for another 5 to 10 minutes. The dish is done when the sauce has reduced.

    Finally drizzle with a little oil and serve hot with a side of your choice. Enjoy!
