    Smoking the pork.

    Wash the pork thoroughly with salted water, then let it soak for 10 minutes.

    Wash the smoking seasonings thoroughly and drain them. Cut half of each of the 4 bell peppers, the leek, onion and garlic, then crush them in a blender.

    Pour the mixture of crushed seasonings over the meat, adding 3 tablespoons of mustard, crushed pepper and salt. Toss and let it rest for 30 minutes.

    Build a wood fire. Place the meat on the grill rack and cover it with the banana leaf. Let it smoke for 2 to 3 hours.
