    Soak the rice in plenty of water and let it rest for 10 hours.

    Drain and rinse the rice. Reserve 1 litre of water.

    Blend it finely with 300 ml of water. Once you have a very fine porridge, add the remaining 700 ml of water and mix well.

    Pour the rice/water mixture into a pot over medium heat. Boil for 5 minutes, stirring constantly with a spatula or the foufou stick. Lower the heat and continue mixing for another 10 minutes.

    Then set the pot on the ground and hold it between your feet (put a cloth between the pot and your feet so you don't burn yourself). Stir your foufou briskly to make it homogeneous.

    When the dough is well homogeneous, form balls with a saucer and serve.
