    Peel the yam very carefully and wash it, then cut batons, no matter if they are not even. Wash these batons, then drain them.

    Pour 2 to 3 litres of water into a pot, add salt and bring to a boil over high heat. Drop in the yam batons and blanch them at a rolling boil for 30 minutes.

    Drain and let the batons cool, then dry them in a cloth. Plunge them into the oil and let them fry until they are golden brown.

    Salt and serve as an appetizer or as a side dish.
