    The day before, soak your beans in a pot filled with water. The next day,

    drain the beans, wash them and put them in a pot or a pressure cooker. Add salt.

    If you have a regular pot, cook your beans for about 1 hour over low heat, checking from time to time. If you have a pressure cooker, cook your beans 20 to 30 minutes from when it starts whistling.

    While the beans cook, finely crush the onion, tomato, chilli, bell pepper, celery and garlic.

    Once the beans are cooked, drain them and rinse them generously, changing the rinsing water regularly.

    Place a pot on the heat,

    pour in oil to your liking.

    Sauté the finely cut onion and bell pepper in hot oil for 5 minutes.

    Then add the previously crushed condiments (onion, tomato, bell pepper, celery, garlic) to this mixture.

    Let simmer another 5 minutes.

    Add the diced carrots and green beans and let simmer.

    Pour in the beans, stir and let cook about 10 minutes, just long enough for them to blend well.

    Stir now and then. As soon as the sauce begins to dry, add oil to your liking. Some people like their beans "swimming" or "submarine" as we say, so they add a lot of oil. Serve your beans with steamed plantain, rice, plantain fries or fritters. Enjoy!
