Nfiang Ndo'o (Wild Mango Seed Sauce)

Wild mango (Andok in Ewondo, Bush mango in Bangangté, Ndoka in Bassa, mwiba in Bulu, En'doé, ando'o in Mvae, Ando, njaka in Douala) is a species bearing edible fruit prized especially for its protein-rich nuts. Its seeds can be ground or crushed and used as a flavoring agent in soups and stews. In Cameroon, the dish made from these wild mango seeds is called Nfiang Ndo'o.

    Clean, gut, trim and cut your fish into steaks.

    Drain your fish and fry it on both sides in very hot oil.

    Finely grind your wild mango seeds.

    Grind the tomato, ginger, garlic, chili pepper and onion together.

    In a pot, heat 3 tablespoons of oil and cook the ground tomato in it for 5 minutes. Add the wild mango seed powder, stir, add 1 glass of water and let cook for another 10 minutes.

    Add the pieces of fish, placing them gently. Let cook again for 10 minutes.

    You can add water depending on how thick you want the sauce. Serve with rice, cassava fufu or corn fufu.
