    Sift the millet flour. Bring the water to a boil. Once boiling, pour half of it into another pot and keep it warm.

    Throw half of the flour into the water remaining on the heat. Stir vigorously and crush any lumps that may form.

    Pour in the remaining flour, still mixing quickly. If the mixture is too dry, add some of the hot water kept in reserve.

    Let cook for 15 minutes, stirring constantly.

    Take a little dough with a saucer, form a rough ball and place it on the serving plate. Form one portion per person this way.
